Pumpkin Ginger Parfaits:
Though a truly festive dessert, it tastes so good,
they'll be beggin' for it year 'round!

Ingredients:
1 pkg. gingerbread cookies
1 pkg. Pumpkin Pie Dip Mix, prepared as directed on package with whipped cream topping
2 cups prepared vanilla pudding

Directions:
1.
Crush all but 6 of the gingerbread cookies into crumbs. Set aside reserved whole cookies.
2. Sprinkle about 1/4 cup of the crumbled cookies in the bottom of each of 6 tall drinking glasses, white wine glasses, or parfait dishes.
3. Drop a large spoonful of prepared Pumpkin Pie Dip into each glass.
4. Drop a large spoonful of pudding into each glass.
5. With the back of a spoon, gently smooth down layers.
6. Repeat layering until you are out of room in the glasses or you have run out of an ingredient.
7. Cover and chill until ready to serve.
8. Before serving, place a whole cookie, standing on its edge, into the top of each parfait.
